New Peruvian Cuisine Cookbook Published with Help from Cerro Verde
January 12, 2026 - The fourth edition of the cookbook La Gran Cocina Mestiza de Arequipa (Arequipa's Great Mestizo Cuisine) has been published with support from Freeport’s Cerro Verde operation in Peru.
The book includes traditional Arequipa recipes gathered over the past few years from chefs, culinary experts and people who know and love the region’s cuisine. Cerro Verde, which has sponsored the printing of previous editions, paid for the printing of about 2,000 copies of this year’s book.
“Publication of this book is a testament to our ongoing commitment to preserving and promoting the gastronomic heritage that defines our city,” said Rosario Barrios, Public Relations Supervisor-Cerro Verde.
The 587-page book by Alonso Ruiz Rosas features nearly 700 recipes and is intended to serve as a key reference for the region’s traditional cuisine. The recipes help preserve Arequipa’s cultural heritage while supporting local economic development by strengthening the area’s culinary identity. The book also plays an important role in sharing Arequipa's gastronomic traditions with audience’s locally, nationally and internationally.
The publication was presented at an event by the Picantera Society of Arequipa by Ruiz Rosas, the organization’s founder and honorary president. Among its appendices is the first cookbook published in Peru in 1867.
